Viansa '19 Carneros Sonoma Altura Late Harvest Primitivo

Our Late Harvest Primitivo expresses aromas of raisins, dates, dried cherries, and a hint of oak. On the palate, the soft tannins and the richness of the wine mirrors the nose, with notes of dates and baking spice. This is a sweet, dessert wine. Pair with a citrus olive oil cake with tart cherry syrup. The richness of olive oil, fragant lemons, and tart cherries create a delicious dessert that pairs perfectly with our Late Harvest Primitivo. 

Extended time on the vine allows for increased sugar content and secondary flavor development. Because of the higher sugar content of the grapes the primary fermentation arrests itself once the alcohol reaches a certain level leaving the wine with a nice viscosity. The higher alcohol is balanced with the sweetness making this a perfect lighter-bodied dessert wine, while maintaining the Primitivo character. Primitivo is a naturally dark wine, so the grapes are pressed after a week and the resulting wine is aged in neutral barrels for 15 months.
