Viansa '23 Lake County Terra Sandy Bend Muscat Canelli
Sandy Bend Vineyard is a certified sustainably farmed vineyard in Upper Lake. At 1,400 feet above sea level, this vineyard sees temperature differences of 40°F between day and night, which gives the vines warm days for ripening and cool nights to repair from the heat. The nose on this wine shows the typical Muscat Canelli aromatics with notes of jasmine, elderflower, white peach, and lychee. The flavors on the palate show hints of lemon, candied ginger, Asian pear, and apricot, with a sweet finish. Try this lively white with a blue cheese, pear, and walnut salad or an apricot cheesecake.
Whole clusters we gently pressed, and juice settled in tank for 48 hours until the turbidity was under 50 NTU. The clear juice was racked off the heavy solids to a second tank where it was inoculated with VL3 yeast. This strain is known to heighten thiol aromatics and increase roundness while making an elegant, finessed wine. Fermentation lasted two weeks at 55°F and the fermentation was arrested to keep the natural sweetness of the grapes. This was done by stepped-down chilling of the tank to 30°F and then adding sulfur to further inhibit fermentation. The wine was held at 30°F for three months before being filtered and bottled.
