Viansa '23 North Coast Terra Sauvignon Blanc
The fruit for this wine comes from the Hi Vista Vineyard at the base of the Sonoma Mountains in the Carneros AVA. This cooler growing area produces exceptional white wines that keep their acid while developing complex flavors. Beautiful notes of sweet lime, lychee, haricot verts, and pineapple jump out of the glass, with flavors on the palate that mirror the aromatics, with additional flavors of grapefruit and melon as well. Try this crisp white wine with Spaghetti alla Nerano (an Italian zucchini pasta dish) or Thai green curry.
Fruit was machine harvested in the early morning then pressed off the skins to stainless steel tank. The juice was settled until the turbidity was under 50NTU. It was then racked off the heavy solids to another tank. The juice was inoculated with Zymaflore X5 yeast which heightens aromatic intensity of higher thiol-producing varietals. Fermentation lasted three weeks and once the wine settled, it was racked of the lees to another tank where it aged for three months.
