Viansa '23 Sonoma County Terra Pinot Noir
Our 2023 Terra Pinot Noir expresses itself from the first scent. Bright notes of blueberry, blackberry bramble, sweet oak, and savory herbs are lifted from the glass. The flavors show fresh black cherries, violets, and blackberries with refined tannins. Try this wine with tomato braised chicken with mushrooms and polenta or miso-glazed salmon.
The grapes were hand harvested cold in the middle of the night then cold soaked in tank for 48 hours to extract color. AMH yeast was selected for fermentation, which has the ability to lift fruit and spicy aromatics. The grapes were gently warmed to 85 °F before being inoculated, and the wine was fermented on the skins for 14 days before being drained and pressed. This temperature is ideal because it allows for adequate tannin and color extraction while preserving the more delicate aromas of Pinot Noir. The wine was aged in oak – 10% new Quintessence and Damy coopers and 90% neutral French oak – for 8 months in barrel before being bottled.
